Ingredients:
1/4 cup oil
1 cup mushrooms, sliced
1 large bell pepper red, cut into 1inch
1 cup broccoli
1 cup cauliflower florets
1 cup carrot, diced
2 teaspoon ginger, grated
1/2 cup roasted cashews
2 spring onions
3/4 cup chicken stock
2 tablespoon soy sauce
1 1/2 teaspoon cornstarch
2 tablespoons vinegar
1 teaspoon salt
1/2 teaspoon pepper, ground
Preparation:
Heat oil in a large nonstick wok or skillet. Add mushrooms, red pepper, broccoli, cauliflower, carrots and ginger, and stir fry for 3 to 4 minutes or until the vegetables are tender but still crisp.
Cut green onions into 12 inch pieces and add this and cashews nuts to the vegetables and stir fry for 2 minutes.
Combine stock, soy sauce, cornstarch, vinegar, salt, pepper in a small bowl and stir into vegetables and cook for 2 minutes or more or until thickened. Adjust the seasoning with salt and pepper.
Serve with plain or fried rice.
