Mixed Vegetable Masala

A delicious mixture of vegetables that spiced up with green chillies, paprika and garam masala. A complete side dish that goes well with naan or boiled rice. You can adjust the flavor by alter green chillies or paprika.

Ingredients:

2 tablespoon ghee
1 onion chopped
1 teaspoon cumin seeds
1 big potato cut into cubes
1 carrot cut into cubes
1 cauliflower diced
1 egg plant chopped
1 cup peas
1 kilogram tomatoes chopped
1 bunch spring onion
1 cup yoghurt
2 green chillies chopped
Green corriander (chopped) for garnishing
1 teaspoon Garam masala
3 tablespoons minced garlic
2 whole black peppercorns
1 teaspoon ground ginger
1 teaspoon paprika
1 1/2 teaspoon turmeric powder
1/2 teaspoon crushed red pepper flakes
1 teaspoon salt
1 cup water

Preparation:

Heat ghee in a pan and fry onions, cumin until golden brown.
Then add garlic and peppercorns.
Saute until onions are tender.
Mix in ginger, garam masala, turmeric, paprika, red pepper flakes, and salt. Stirring constantly, cook until onions are thoroughly coated with the seasonings.
Add all the vegetables except peas and cook for few minutes.
Then mix the yoghurt and water to form curry.
Cover and simmer for 20 to 30 minutes.Add peas during the last few minutes of cooking.
Garnish with coriander.
Serve hot.
