Chicken Satay Noodles

A filling Thai dish in which Strips of chicken (or beef) are marinated in a special Thai paste and serve over noodles along with Satay sauce.

Ingredients:
2 tsp ground coriander
2 tsp ground cumin
2 tsp ground turmeric
700 grams chicken fillets, chopped
250 gr noodles 6 green onions 150 gr
Fresh baby corns
2 tblsp peanut oil
1 large carrot, sliced thinly
2 tblsp finely chopped coriander leaves
SATAY SAUCE
1/2 cup peanut butter
1/2 cup coconut cream
1/2 cup chicken stock
2 tblsp soy sauce
1 tblsp brown sugar
1 tblsp lime juice
Preparation:
Combine coriander, cumin and turmeric in a bowl, add chicken, mix well to coat with spices.
Place noodles in a large bowl, cover with boiling water.
Chop onions and corn diagonally into 4 cm pieces.
Heat half of the oil in a large frying pan; stir fry chicken, in batches, until browned.
Heat remaining oil in pan; stirfry corn and carrot until just tender. Return chicken to pan with noodles, onions, and satay sauce, stirfry until heated through.
Sprinkle with fresh coriander.
SATAY SAUCE: Combine ingredients in a bowl and mix it.
